The most commonly eaten food by the Rajasthani is the vegetarian food. The finger-licking spicy food is the part of Rajasthani cuisine. The sweets served along with the food in Rajasthan are also very delicious that are liked by all. Generally sweets are taken after having the main course meal in any cuisine but in Rajasthani cuisine the sweets are served before the meal and it is never considered desert in Rajasthani cuisine. The food is served in a particular manner to the arrived guests. The guests are served the food in the traditional Rajasthani manner. Rajasthani people don’t feel good if the guests have to serve themselves, the practice of self-service is not considered appropriate and the etiquettes of Rajasthan does not believe in self-service.

The food preparation in Rajasthan food is done keeping the weather conditions of the area in mind. Due to the deficiency of water in the area they don’t have fresh grown vegetables easily available and also scarce of water is the factor that is unhelpful in preparation of many types of food. These factors thus help in usage of more milk, butter milk and butter more that the water while preparing the food.

Usage of dry lentils and beans in food preparation is also favorable in Rajasthani cuisine. Gram flour is used for making the dishes like “pakodi” and “gatte ki sabzi”. Lentils are dried in sun and then crushed in powder to make the papad. Spices like coriander, garlic, turmeric and mint are used to prepare the chutney without which the Rajasthani cuisine is considered incomplete.

The major list of Rajasthani cuisine includes dal bati churma. This is considered to be one of the most important dishes in Rajasthani platter. The variety of sweets that are served in Rajasthani cuisine are Mawa kachori that is major sweet of Jodhpur, Bikaner is famous for Rasgullas. Jaipur serves Ghewar in sweets while Pushkar has moth-watering Malpuas in there sweets list.
